Spring is officially here, with the days getting warmer, the nights getting lighter and a weekend of Easter fun ahead. Our favourite thing about Easter is, of course, the food! It’s the perfect opportunity to whip out your Recipe File and make some classic Easter bakes, so we’ve pulled together our favourite treats to make this weekend. Whether you’re having a fun-filled day with the kids or a picnic in the sun with friends, we’ve got you covered.
For the kids: Mini Egg Nests

Starting off with a fun classic, we all know you can’t escape mini eggs at Easter time – and why would you want to! These quick and easy Mini Egg Nests are the perfect treat for the kids to get involved in making and enjoy in between easter egg hunts. Simply melt some chocolate, butter and golden syrup in a bowl and drizzle over your cornflakes until it is all mixed together. Then, divide the mixture between your paper cases and press 3 mini eggs into the centre of the nest. Chill in the fridge for about an hour and voila!

A household classic: Hot Cross Buns
Preparation time: over 2 hours Cooking time: 10 – 30 mins Serves: 12
Easter just wouldn’t be the same without Hot Cross Buns. These traditional spiced, sticky glazed fruit buns are a great bake to wow your family and friends with – so let’s put your skills to the test. You’ll need all the usual ingredients, flour, eggs, butter, milk, sugar and of course some spices!

Seriously sweet: Crème Egg Rocky Road
Preparation time: 15 mins Cooking time: 15 mins Serves: 12
Looking to seriously indulge this weekend? Crème Eggs are just as unavoidable as mini eggs this time of year, so why not make this deliciously rich rocky road. For any rocky road recipe, you can pretty much add anything to the core ingredients of chocolate, biscuits and marshmallows and it is going to taste great, but we think this crème egg creation is just dreamy.
Note: Make sure to freeze your eggs a few hours before you intend to start baking. This allows them to keep their shape when you mix them together with the warm chocolate mixture!

This wonderfully simple lemon drizzle loaf recipe is super-quick to prepare and perfect for any Easter occasion.
