In honour of pancake day, we thought we’d share a super simple fluffy American pancake recipe – an excellent addition for your Busy B recipe file.
Ingredients:
210g plain flour
50g sugar
2tsp baking powder
55g unsalted butter
2tsp vanilla extract
2 large eggs
240ml milk
Toppings of choice
Method:
In a mixing bowl, sieve together the flour, sugar and baking powder.
Add the butter to a separate mixing bowl and microwave until just melted, then add vanilla extract, eggs and milk to the softened butter and combine.
Combine the wet and dry mixtures, then gently fold together, the consistency should be thick and smooth.
Heat a frying pan on a medium-low heat, add a little oil to the pan and pour over 3 heaped tablespoons of the pancake batter. Cook until golden brown, then flip and cook for a further 1-2 minutes.
Continue the above method with remaining pancake batter.
Serve pancakes stacked, with your topping of choice.
