No Recipe File would be complete without an indulgent chocolate treat! This one is the ultimate upgrade on coffee cake – layer with delicious coffee icing and enjoy!

You will need:

For the cakes:
100g unsalted butter, plus extra for greasing
100g light brown soft sugar
100g self-raising flour
1 tbsp fine instant coffee powder
3 eggs
Extra butter & flour for greasing

For the coffee icing:
50g soft unsalted butter
2 tsp fine instant coffee powder
100g icing sugar
Extra icing sugar and cocoa powder for dusting

STEP 1:
Pre-heat your oven to 180 c / gas mark 4. Get 6 little cake moulds greased and ready!

STEP 2:
Dissolve the coffee granules in 3 tablespoons of boiling water and beat in with the flour, sugar, butter and eggs. Spoon into the moulds, and bake in the oven for 20-25 minutes.

STEP 3:
For the icing, dissolve the coffee granules in 1 tablespoon of boiling water. Sift the icing sugar into a bowl, add the butter and whisk until creamy. Ice the cakes, dust with extra icing sugar and cocoa powder, and enjoy!
