Smarten up your Recipe File
with a great twist on a classic 'leftovers' recipe, you just can't go wrong!
You will need
1 pound potatoes, peeled & diced
5 tbsp butter
1 apple, diced
1 onion, sliced
2 stalks celery
1/2 glass white wine
8 oz cooked turkey, shredded
1/2 cup cream
1/2 cup chicken stock
2 tbsp fresh sage, chopped
In a pan, boil the potatoes for around 7 minutes until soft, drain, and set to one side.
Heat 3 tbsp butter in a large skillet (medium heat). Add the apple, cook for around 11 minutes (until golden brown) and set to one side.
Add the remaining butter, onion and celery. Cook for around 10 minutes, then add the wine. Cook until the liquid almost completely evaporates. Add turkey, potatoes, cream and stock, and cook for another 12 minutes until all the veg is soft, and the sauce is creamy. Stir in the sage, apple and some salt and pepper, and you're done! Serve hot, with toast.
