No Recipe File would be complete without a cake! This one is a hearty loaf, with prunes and ginger for a lovely warming spice, perfect for Autumn baking!

You will need:
Butter, for greasing
10 oz. flour
500g plums
2 oz. finely mashed potato
3 oz. dark muscovado sugar
3 oz. butter
2 oz. cooking oil
2 tbsp golden syrup
2 eggs
A little milk
½ tsp bicarbonate of soda
1 tbsp ground ginger
1 tsp baking powder

Step 1:

Heat oven to 180C/160C fan/gas 4. Grease and line the base of a loaf tin with baking paper.

Step 2:

Sieve the sugar into a large mixing bowl. Heat the butter and oil gently with the golden syrup, and add the bicarbonate of soda. Mix together with the sugar and then add in your two eggs.

Step 3:

In a separate bowl, sift together the flour, baking powder and ginger, then add the potato and prunes. Add this to your sugar mixture, add in a little milk until this becomes a dough, and leave to bake for 2 hours.
